1° Recipe
White Truffle Tartare
Ingredients:
- 200 g of first choice beef tartare
- Salt and pepper
- Giuliano Tartufi white Truffle Oil
- Giuliano Tartufi’s Truffle Sauce
- Fresh white truffle
PREPARATION TIME: 10 MIN.
Instructions:
- Start by placing the beef tartare in a bowl. Be sure to use prime meat for maximum flavor.
- Add salt and pepper to your taste. You can adjust the quantities according to personal preferences.
Add a few drops of Giuliano Tartufi white truffle oil. This oil will give an aromatic and delicate flavor to your tartare. - Add a spoonful of Giuliano Tartufi truffle sauce. The sauce will help enrich the flavor of the meat with its earthy notes.
- Mix all the ingredients gently until you get a uniform dough. Make sure the ingredients are well mixed to distribute the flavors evenly.
- Proceed to plating (you can use aromatic herbs for your composition).
Add a drizzle of white truffle flavored oil again over the tartare. - Finally, garnish the tartare with flakes of fresh white truffle. The truffle flakes will not only make the dish visually appealing, but will also contribute their intense, aromatic flavor.
Your White Truffle Tartare is ready to be served! Accompany it with croutons or toasted bread to complete the meal.
2° Recipe
Crostone with Truffle Cream and Colonnata Lard
Ingredients:
- Sliced bland bread
- Colonnata lard
- Giuliano Tartufi truffle cream
- Black truffle flavored oil
- Fresh black truffle
PREPARATION TIME: 5 MIN.
Instructions:
- Start by cutting the Colonnata lard into strips. You can adjust the quantity according to your taste preferences.
- Place the lard strips in a non-stick pan and fry them until they become crispy and release their flavour. It is not necessary to add oil as the lard already contains sufficient fat for cooking.
- Meanwhile, toast the bread slices until crispy. You can use a grill or pan to get a nice browning on both sides of the bread.
- Spread the Giuliano Tartufi truffle cream generously on the toasted slices of bread. Make sure to cover the entire surface of the bread to ensure each bite is packed with flavor.
- Place the strips of fried lard on top of the truffle cream spread on the bread. Distribute them evenly to ensure that each bite has a little lard.
- Grate a fresh black truffle over the croutons. The black truffle will give an intense flavor and aroma to the dish, completing the taste experience.
- Season the crostini with a drizzle of black truffle flavored oil to add a touch of elegance to the dish.

3° Recipe
Cappellacci with Anchovy Butter and White Truffle
Ingredients:
- 500g of cappellacci
- Giuliano Tartufi butter and white truffle specialities
- 200 g Cantabrian anchovies
- Fresh white truffle
- White truffle flavored oil
PREPARATION TIME: 15 MIN.
Instructions:
- Start by frying 2 teaspoons of Giuliano Tartufi butter and white truffle specialty in a pan. Make sure you use a pan large enough to accommodate the cappellacci later.
- Add the Cantabrian anchovies to the pan with the butter and white truffle. Fry the anchovies until tender and melting slightly in the pan.
- Remove the anchovies to the pan, leaving only the white truffle dressing. Keep the dressing warm while you continue with the preparation.
- Meanwhile, bring water to a boil in a large pot. Add salt to the boiling water and cook the cappellacci according to the package instructions or until al dente. Cooking times may vary depending on the type of cappellacci you use.
- Drain the cappellacci and transfer them to the pan with the white truffle seasoning. Sauté the cappellacci in the pan for a few minutes, so that they mix well with the sauce.
- Proceed to plating by placing the anchovies on top of the cappellacci. The anchovies will add an intense and salty flavor to the dish.
- Add the wild fennel over the cappellacci and anchovies.
- Grate fresh white truffle over the cappellacci to enrich the dish with its fine flavour.
- Finally, season raw with a drizzle of white truffle flavored oil.
